I think most of the time the noun form is ok, mostly when used to aviod saying "Jewish person", which is unwieldy. Here is one where it probably should be avoided:
(It's Chanukah season) Person 1: Have you seen Adam Goldstein around today? The reply should not be "No, he's a Jew" but rather "No he's Jewish". The verb form is almost never acceptable.
