Because in case you and a few of your friends shared card color information you could gain a very large edge (think Omaha for instance). My prediction is this feature will be discontinued fairly soon.

It's 1 in 8.5 if you don't know any of the cards, so the house edge is 6.5%.

If you are in the game, and have 2 cards of the same color, the odds the flop will be all the other color is about 1 in 7.5, so you have the advantage.

It doesn't say 8-1, it says 8 for 1, which is 7-1.

I hope this clears things up. Here is party's EV for $1 wagered on red (black is the same):

P(all red) = (26/52)*(25/51)*(24/50) = 2/17 = 1/8.5
Payoff: -$7
P(not all red) = 1 - P(all red) = 7.5/8.5
Payoff: +$1

EV: (1/8.5)*(-$7) + (7.5/8.5)*(+$1) = +$0.05(8823)

seriously WTF party must think everyone there is dumbass. I hate the blackjack (oh BTW I lost like $500 the first time paradise added BJ but I am only part dumbass).
