Some kind of profession that requires him to either detect movement or see white objects against a white surface. I have no idea what is was though.

He was not a pro fisherman, a bonefish guide, a sunglasses salesman or any of that. His profession was uniquely suited for spotting bonefish. Not a golf cameraman, but that's the best guess so far.

A painter or paint salesman, somebody who is likely skilled at distinguishing different shades of white.
