Would it be too weak-tight to check-fold here? There are too many cards that could hit on the turn/river which we would end up paying off, but would not pay us off. If we hit the gutshot, the board looks scary and the action dries up. Or am I just a big girl?

well it is a possibility, but you have a straight draw as well. that's why, me personally, i'd check/call because i don't care if it gets bet as i have top pair, but i also don't care if it gets checked through. and your hand is too weak to pay 2 bets to get to the turn if you get raised.

I'd prefer to just bet the flop. That should offer worse enough odds to the players behind you.

I would probably check-call the river, as you can pick off a bluff. What would he call with that you beat?
