Pay careful attention, especially the first thirty minutes. Not just to hands that get to showdown, but to betting patterns, whether a PF raiser keeps the lead, etc. Also look at physical stuff like how they bet - how they physically put their chips in. Though not foolproof, stuff like this can show you who plays a lot of cards and who doesn't.
