I usually pick up 6-8 of these per year. Fresh, they're pretty crappy; overwhelming "alcohol-y" taste without much depth. However, I just had a 2002 about two weeks ago and it had developed nicey. Almost all of the "burn" associated with high gravity beers was gone and left behind an almost port-like brew in terms of flavor and finish.

The best thing to do with these is to buy some and put them away for at least a year.

Specifically because of this thread I went to Trader Joe's today, where they have the large bottle of Chimay "Premiere" (the red one) for $6.99. This is the best deal on Chimay that I know of. I'm hoping I can keep myself from drinking all three bottles I purchased, because fat, drunk, and stupid is no way to go through Sunday afternoon. Or so my wife says.

well cause that's at a strip bar. I've bought 6 dollar beer at a bar before. Never a 5 dollar bottle at a liquor store.

Haven't been to Monk's yet this year. I was at Kildare's in Manayunk last night, and Chimay Blue on tap was $8.75 per pint. But if you're down in Manayunk area, check out Flat Rock Saloon.
