The longer blinds with a shorter stack is a far better option than shorter blinds with a bigger stack. This is espically true with a "home" tournament of this size. I imagine their wont be a dedicated dealer at each table, and with 100 players, I also imagine their will be many players who and farily new to the game, and will need extra time to deal.

I host weekly one or two table tournaments, and when we get over 15 players, sure enough their is a couple of players who need extra time.

My other advice is HAVE A TOURNAMENT DIRECTOR. Running a tourney this size isnt easy; Moving seats, closing tables, ruling on hands, coloring up, are all more difficult with a 10 table tournament. Throw in the re-buy option and you need an assistant.
