The best way to beat a maniac is to play back at him. Play very tight and when you get a strong hand, limp. When he raises you, push no matter how many chips that would be or what level.
Poker is all about adjustments. You can't play passively against a maniac. You have to beat him at his own game. He can still beat you by calling crap all-in and outdrawing you. But you know the rule: All you can do is put all your money in the best situation. Do that enough and you'll win more often than not.

Against ANY player you are dealing with a straight and flush draw yet you hit TPTK; you should NEVER check that flop. You failed to beat your opponent at his own game and he outdrew you when you let him.

BAADDDBEAAATTTTTTTT. I think you just got outplayed. You checked, hoping to CR, and he was smart enough to take the free card. I think you should just bet that flop and never again call a miniraise with AK. Fold preflop.
