I think you're giving too much credit to your opponents. A ton of players would call off their stack with AK on that flop.

There's definitely an argument for reraising and taking it down preflop. (More so if the cutoff is very aggressive and thinks you may be re-stealing.)
Of course if you try that and he calls you definitely won't be getting away from this hand after flopping a set (but it will make your decision easier).
But in the end, there's really nothing you can do. He's going to get your money since you have a monster, and he can probably tell that by your betting (otherwise he wouldn't pot the river), and he has a bigger one. C'est la vie.
