I think melted cheese is a big mistake on nearly all deli sandwiches. Ruebens and such being an exception.

As for mustard--I'm just very used to mayo on sandwiches. I reserve mustard for hot foods like hot dogs and kielbasa.

The bagel was plain and not spectacular.
