As someone who is also fairly risk averse, I can tell you that nothing you say will convince your friend to move up in limits. He will only do it when he is ready.

If you stake him, he won't be playing with his own money and will agree on playing and getting comfortable in the new limit. You will earn money since he's such a great player. Your friend sounds a lot like me. I didn't move up to 1/2 until my BR hit 3500. I'm still playing 1/2 with a 13k BR for a few reasons. For me, moving up has a lot to do with emotionally preparing yourself for the higher stakes, which is something I'm not ready for and this probably applies to your friend as well. Even with a large bankroll, something like a 200BB downswing or losing 7 buyins playing $25 PLO, like I did today, STILL hurts. Get him to log 10k-20k hands at 1/2 to build some confidence.
