This is an issue of asthetics. For poker rooms have to appeal to the average joes before they appeal to card sharks. Average joes will like playing at something similar to a Brick and mortar table. with a dealer, and cards being dealt and a chip rack and bla bla bla.

Why not have round tables and no dealer? In real life, you need to fit 10 humans and a dealer, hence the shape. Isn't it time to design a more efficient online table that takes up less space?
