Your hand is plenty strong. You want to charge them to draw while they're drawing dead.

In the spirit of maximizing the value of these hands. Once we have them drawing dead how much do we bet? What we think they will call obviously, but do you suppose most players know the odds to draw to thier flush? Should we then under bet, thus tempting them to draw?

Nope, bet 1/2-full pot leaning towards the high side, if they will call a 1/2 psb with a fd, they will call an extra 25% more. Many players at this level will chase to the river with what they see as a strong draw no matter what.
