Newbie Question...

I just read a post about "shuffling downcards". I am so new at Stud, played micro like a few times, I have no clue, but I am curious...in a live setting, if you can shuffle your two downcards and the card you get on seventh, doesn't this make getting a read on your opponent and what he plays much more difficult? I mean, how can you tell if he was semibluffing and got there or was there the whole time? And online, can this be done?
