poker theory question???

how often can someone change a strategy, if they are doing so cant they be labeled as that type of player! most say that the ones that change their strategy during a game are the ones that cant be broken, but if that is how they play why cant you label them as such and crack that style! it should be a never ending process at which they play, correct?
