are you saying you NEVER make an -EV play in order to take a stab at a pot vs a guy who is bullying?

I don't know if I understand your question, since I definitely factor fold equity into my judgment of EV. I may learn after the fact that the play I made was -EV against the specific hand my opponent held, but if my judgment of the range of hands was reasonable, then it was +EV in my mind at the time I made the play.
