Must Read Fantasy Series?

Just would like to see some input on series others really enjoy. Also looking to extend my nice little library.

Obviously Lord of the Rings.

My personal favorite atm The Wheel of Time by Robert Jordan. Book 11 coming October 2005. Although it is becomming more of a soap opera than a fantasy series, but the first 6 books were amazing.

Somebody mentioned Song of Ice and Fire by George R.R. Martin but I have heard nothing about that.

I also really like David Eddings: The Belgariad and The Malloreon.
