I had a hand almost exactly like this come up, but I had A8o instead of AK. The action was almost precisely as you described, where a tilter made it 2 bets utg, I reraised with A8o on the button and one of the blinds came along for the ride. 3 bets on the flop where I just called tilters 3-bet. I got the player in the middle to fold by raising the turn with no pair. I won the hand against the maniac's K3o or something, and when I posted it everyone called me the bigger maniac. You might be able to find this hand in the mid-high stakes forum, as I messed up and posted it there, under the title "Who's the maniac now" or something like that.

Obviously you can't play like this very often, but so rarely does this situation come up, I think it's ok. Just one way to vary your play. And it certainly does piss people off when you outplay them.
