Sweetbreads
Does anyone know what they taste like? I have the opportunity to eat some tonight (roasted, with mustard sauce) but don't know whether to stray from my trusted and true seared venison.....

Re: Sweetbreads
Sweatbreads (brains) are pretty good. I have never had them in a mustard sauce (don't particularly like that). But please post a trip report once you have.

Isn't this how mad cows disease and other neurological disorders are spread?

[/ QUOTE ] I've never had them, so I can't comment on the taste, but I'm pretty sure they're not brains. I think they're generally the pancreas. Mmmmmmmmmmm, pancreas. |

Re: Sweetbreads
The only time I ever had them (fancy continental restaurant) they were too rich/fatty tasting and the texture was offputting. I wouldn't get them again.

Re: Sweetbreads
Sweetbreads are not brains, and that definition in your link is half right, i have never seen them from the stomach only the thymus gland of a calf before it suckles. They have no taste and the texture is very hard to explain sort of like a titty in your mouth very soft and smooth , they melt in your mouth.

Re: Sweetbreads
Anyway, the sweetbreads were a huge success. Pan roasted so they were crispy and savoury on the outside, while sweet, supple, and yielding on the inside. Served with whipped potatoes, green beans and asparagus it made for a lovely meal.
In addition, it seems to be +EV. After eating I went to the casino and won $725 in 3 hours of 2/5 NL ($300 buyin). |
