Default Hand win %

Is there a chart somewhere that shows the how often 2 cards will win against any other 2 cards? For example, how often AQ beats KJ.

I don't have any links off the top of my head, but I know that in the STT forum's FAQ we have a link to Pokerstove, free software that evaluates equity between as many as ten hands. You can also just check the odds for two hands like you mentioned, or a given hand against one or more random hands. I think this does what you're looking for and will let you experiment with some situations not on charts.
