Default Switching between monitor resolutions...

I've found that I can get fit 4 tables onto my monitor fairly nicely by maxing out the resolution, but I have to switch back when not playing poker. Can this cause any stress or damage on your system - that is, switching the screen resolution back and forth frequently?

This does not damage your system at all, no matter how many times you do it. Well maybe if done excessively, like if some program switches between resolutions every 5 seconds for days on end but general usage should have no effect.
