I play this the same way with the exception of a cap on the river - though there aren't many hands that you do beat that would come alive with that river card, I still don't back down with my flush - I think it's probably good half the time.
That having been said, in the heat of battle, I probably do the same thing you did and just call his 3-bet...but I get scared pretty easily at the table it seems.

With that turn card a checkraise from somewhere seems fairly likely. Plus it's not likely that all six will call and some of his outs might not be good. Take the free card there.

The only possibility is two pair, and I imagine they would just call the river raise by Bison, not re-raise. A higher flush is more than 50% likely in this situation, I think.
