or should I got from 10/20 to 20/40 to 40/80 if needed?
Also is 20 minute level good, or would you go 15?

Based on your blind scheduele, starting chips and expected number of players, your game would genearlly end at the next level after 20/40 (40/80?). That would put you in the 2:00 - 2:20 minutes range (not including breaks). If you want the game to end closer to 2 hours, you should remove the 15/30 level and definitely add in a 40/80 level and even a level after that just in case.
