Well, many use the Dell 2001FP monitor. It is 20.1" and has 1600x1200 resolution. You can 4-table without overlap on this monitor.
In terms of # of tables it depends on where you are playing. Party allows 10 tables now, so just open 10 up and position them on your screen as well as you can. You don't need software to multi-table. Different poker rooms have different specifications for the amount of rooms you can play.
