It was Royal Holdem. The deck contains only cards higher than a ten. Therefore, the minimum winning hand is almost always a full house, unless you get really lucky. If you flop a straight it is completely worthless, pretty much best case scenario is that the board makes a straight and you split, or the board pairs once and counterfeits one of your straight cards, and that pairing doesn't make a boat for anyone else (rare). If the board pairs twice you're almost certainly facing a boat. Do you understand now?

Edit: What's also really key, is that if someone flops the nut straight, and I am holding a set (say of aces or kings), they are drawing dead. But many fish do not know this, and they will cap the flop with the "nuts" and cap the turn as well.
