The most difficult math course I took as an undergraduate was a partial diff eq class, but that was probably because it was a graduate level course that I took when I was a junior. It almost blew my head off, but I passed. It was also the most "beautiful" math course I took as an undergrad.
Thankfully my Ph.D. is in physics, so a complex analysis course was never required.
