Yes, I agree that this probably will be a disaster. I believe that there will be a new crop of volunteers every week, so nobody will ever actually be experienced. I think that's a big reason why the rules are so simple. If people could take the game for what it is, then it would be fine. However, I picture a lot of stupid people getting angry just like they do in casinos with real dealers.
