She sounds like relaxation would be a great present for her.
A spa session or similar? Making sure her work is covered so she's got no reason to miss it?
You must of course get flowers. Better still if you can hand-deliver them, and tell her how proud and grateful you are for being her son, and how you appreciate everything she's done for you (and emphasise that you understand this is an awful lot!)
The second part will mean far more to her than any present.
