I think you/we should be careful not to confuse representation with reality. QM is a great model for reality, but to say that every observable IS an operator is dangerous (the fact that the operator needs to be Hermitian is quite easily understood, since it guarantees a result of a measurement to be real valued).
As long as we don't understand how the collapse of the wavefunction actually works, I doubt we can have a strong conceptual understanding of what really happens on a quantum level.
