Because you've got so many $1 chips, you can give every player 100 in chips and start the blinds at:
1-1
1-2
2-4
3-5
etc.
Then again, if you're only playing 7-8 you could just go with 1000 in chips and start at
5-10
10-20
15-30
25-50
etc.
