Yes, we used to play NL tournements that way. Each dealer was allowed to call any one of the standard "flop games": Omaha, Omaha 8b, Pineapple, Crazy Pineapple, Hold 'em, Tahoe, or Tahoe 8b(we rarely played the last two). Mixed game NL can get very confusing for the rookie-types, which is who you want to be comfortable in the game. With everybody and their sister wanting to play NL in the touney setting - we just made it easier and play HE only... which is what everyone sees on tv and wants to play anyway(and everyone is a pro at after only one night).

Other than that if you have a core of knowledgeable players a mixed NL tourn can be fun, but we found that O-8b, and to a lesser extent Omaha, could get pretty crazy as NL.... allowing rebuys are almost a necessity in that case. I say give it a try and see how it works for your group - what everyone likes/wants will evolve from there. How it worked out for us was NL HE tourneys about 50% of the night and limit dealers choice flop games the other 50%. Good Luck.
