One could do this at every break and then take the final standings and match names. It's a lot of leg work, but it offers a big sample size and one that isn't biased by being made up entirely of brown trouts (unless of course the intention of the study is to be limited to 2+2ers).

I don't know what the UI is like on other sites but on UB you absolutely can get the complete list of everyone left in the tournament and what each persons sorted list of exact chip amounts is at any moment in time (although sometimes it has a 1 or 2 minute lag) from the tournament lobby. You can also see # of players left and average chip stack and blind amount them. Someone who took screen shots/screen scraping/data mining from the UB application (which may be in violation of T&C of the site) would have the information for every player for the tournament across time and do what the poster is suggesting.
