Actually a good dealer can keep the game moving (meaning more hands per hour), keep new players in the loop so they enjoy the game (but still spew chips), and "manage" the table making the experience more enjoyable for the casual player ... you know the one that you take the pots from who keeps playing cause he's having fun even though he's down 100BB for the night. To me that's worth a few chips on every pot I win.
