Instead of villain taking it down and the whole table proceeding to the next hand, you'd have to wait while the software gave him the option to show one card, then you'd have to wait for him to pick one (or not), then you'd have to be shown the card, etc. And you just KNOW that this would be an option that all the JohnnyWPT's would be taking advantage of every other hand.
The infinitesimal increase in EV you might get for having this feature available would be strongly negated by the hands/hour lost. It would be worse than paradise's "slow roll".
