In this instance, I would have said, "I had a medium diamond and lucked out on the river."
She feels good about folding, you feel good she folded, and you know you can get her to fold again in the future when a scare card hits.
And since she flashed her cards to you, she feels like you did the polite thing and reciprocated.
It's good to keep the other players happy IMHO. Especially if they are contributing to your chip stack.
