Is that what you really said? Or was it more like "Did you just muck a straight!!?" I think in your surprise you may have conveyed your real feelings in your voice. You know exactly what you saw and you think she's nuts.
Which could explain her reaction given that she was obviously already suffering folder's remorse.
Next time either say "I make it a policy never to show my hand, but you made a nice fold." or smirk and say "Gotcha!" I would go for the first one but I'm still a bridge player at heart. The second one is for those in the crowd that enjoy tilting their opponents.
