Funny thing is that they have different types of pubs/clubs/etc. and each has different hours of the day they can serve alcohol. I seem to recall that "pubs" in the Temple Bar area stopped serving around midnight and then you headed to the "clubs" that were open later. From there, you can keep finding new places to partake in whatever libation you please.
