I cap Hand 1 preflop, but like it from there. If you didn't have a set already I'd check/call or even check/fold that turn given a read--if he just 3-bets JJ-AA and AK/AQs (which is pretty standard) then you're sunk.

Hand 2: I'm not sure what the double check/raise is about--I think I just bet out the turn as it didn't hellp him any. (edit: didn't see that he 3-bet your preflop. Ugh, I think bet/fold on the turn isn't a bad line, since if he raises you know he could beat anything you have. At least on the flop he could be autobetting the flop with jacks.)

Hand 3: Bet out. If he raises call down since you have outs, but you can't let a single overcard scare you.

Hand 4: You probably should 3-bet this preflop since you have position on the raiser, but I don't hate a call. Other than that there's no other way to play this--villain saved you money.
