Sarcasm? I was trying it today betting $1 on 5 hands at a time and went on upswings and downswings of $50. I never get anywhere close to that betting $1 at a time.

Your OP didn't mention that. Bet 1 hand of $1 vs. 5 hands of $1, variance goes up. Bet 5 hands of $1 vs. 1 hand of $5, variance goes down.
