5/10 is hard to come by, but you can find 6/12 at times at the MGM or the Mirage. I'd really recommend the MGM, as there are a lot of young kids who don't really know how to play limit, plus they have a wide range of games from 2/4 on up.
The Bellagio and the Wynn have 8/16 games. The play to me isn't too much different than their $4/8 games, although with less newbies at the table.
I'd say if you're playing $3/6 online you probably won't have too much difficulty playing what you've mentioned in your post, provided your bankroll holds up/is up to it.
