American baccarat is not beatable unless the casino offers countable side bets. Card counting does not work in the basic baccarat game since the impact of even a freakish card distribution is so insignificant in changing the odds of banker versus player wins that it would not allow you to beat the game even under the best realistic conditions (e.g. 90% penetration and a 10:1 bet spread).

Some European versions of baccarat give the player and banker some control over when to take a third card, and these can be beatable under the right conditions. In baccarat-en-banque, there are two player hands and one bank hand, and bettors can only bet on one or both of the player hands. Player hands have the option to hit or stand on 5, and the banker has complete freedom in playing his hand. In the best possible conditions a win rate of about 1.5% is possible. Baccarat chemin-du-fer allows one bettor to be the bank, lay out the amount he is willing to risk, and the other bettors bet on the player hand collectively up to that amount. One bettor can agree to match the banker's whole wager and then take control of the player hand. The banker pays a 5% commission to the house on his winnings. If the casino rules allow the player and banker to completely choose how they play the hand (at least in the case that there is only one player betting against the banker), then this variant can be beatable against an opponent who gives off tells, who is predictable or who is easily manipulated.
