Don't they include pocket pairs plus boarded pairs, two boarded pairs (assuming you have best kicker to get the win), and having both your pocket cards pair-up.

How much can you read into a stat with this many variables?

Well I think you can read something into it over tens of thousands of total hands. If you take a look at many tabs you see that the total won with trips/flushes/boats turns out to be around the same, for instance, even though there are lots of ways you can get trips.
