I was waiting on the list to play $80-$160 at the Bellagio last time I was there, but the list was extremely long. They would occasionally allow me to play over someone if they said that would be gone for a few rounds.
Most of the time the floor will count the chips and put a slip with the amount under the box. This helps make sure no thievery is taking place.
It is very tough as a player to play over though. I always had to keep in mind that I was only going to be in the game for a round or two at the most. One time I played through my blinds and the player came back. Two hands, down $120, no flops seen. Sweet.
