Casino's would surely prefer you cash in all your chips before leaving. Outstanding chips are essentially "Accounts Payable" until they go through the process of taking the chips out of circulation.

Several years ago at a casino in Puerto Rico I remember seeing a sign next to the cage saying that chips "must be redeemed" before leaving the casino. I never saw that anywhere else, but I'm sure they'd prefer as few outstanding chips as possible, and a good accounting of the ones that are out there.
