You're right. But $5K per chip is too many chips to move millions. Even if you use the $25K chips, you're still talking a rack or two amongst everybody at the table. Wiring is safer and easier for these amounts, as long as you don't mind leaving a trail that the IRS might misinterpret (because of all the lending and such in the game, you could easily wire over nothing, and wire back $2M, and all of that $2M might be loans that got repaid).
