Somehow I've missed this part of my poker education.

How do I identify what the nut hand is at the various stages of a holdem hand ?

Especially if I'm holding it.

Is there a quick way to do this in the heat of battle ?

Can't believe I've gone so long without realising I'm not confident about the answer.
