Play AA aggressively. Be cautious when your overt aggressiveness is matched by someone who was initially passive, particularly on partially coordinated boards.

Hand 1:

You likely only have 8 outs on the turn (2 if he's slow-playing JJ or worse, KK, in which case make a note of it) you're helped out by UTG's flush draw, since he's calling all the way, hurt because hearts are most likely no good for you on the river (I'm assuming you don't have Ah). River 3-bet makes it look an awful lot like you're behind... but slowing down on the turn might make villain aggressive. I'm probably wrong, but I think this is ok.

Hand 2:

If as you said you checked each street to start... yikes.

Bet the flop. 3-bet when raised. Proceed aggressively on the turn.
