For our one-table tournaments, we have $1000 in chips (8 $25s and 8 $100s) and have the blinds going up every 15 mins:
25/25
25/50
50/100
100/200
200/400
400/800 (although with six of us we've never got to this level yet)
Having loads of chips and 'awkward' blinds of, say, 75/150 just makes it difficult to count bets, stacks and pots. With a simpler structure you get to concentrate on the game rather than the running of it!
