This brings me to my problem. I am good with odds on the turn. After all, I just check the odds and adjust for (implied odds) possible bets lost or won on the river....

I was hoping that some of the more mathematically inclined could help me here. I know that if I move up from 2/4 to 3/6 my BB/100 is going to drop, but every big bet won will obviously be larger......

With taxes, there are always options. Since you are paying S/E taxes I'm guessing you are set up as a "sole proprietor" and filing a Schedule C. That's much better than treating winnings as gambling...
