How much should I sit down with in a live game?
 
It seems to vary between different poker sites. I believe PartyPoker is 50x SB and UltimateBet is 100x SB. These are the defaults, but you can choose a different amount.

In any case, if I was going to play in a live game, how much should I take to the table?

Except in a 5-10 game played with red chips. One rack is enough there.

20-30 BB. 25 is a good number but if it's a weird structure it's generally best to just buy an even amount and play.

Remember that the key considerations in deciding buy-in size are making sure you have enough chips so you don't get all-in with a hand you want more value from/want to be able to protect or whatever, and having enough chips so that you can build cool structures.
